Galauti/Galawati Kabab- Vegetarian Version | Vegan Preparation

Foodelicious-Veg Galauti Kebab

Hi all!!

I love making Kebabs, which is quite evident from the number of kebabs I have posted earlier. Just to name a few here, there are two versions of vegetarian Shami kababs, one made using elephant foot yam and the other using soya. Then there are a few versions of vegetarian seekh kabab, to name a few, there’s one made using yellow lentils and then there’s another unique one made using green peas and walnut.

Recently, S got an entire raw Jackfruit from his office tree. And when we cut into it, we realised how tender and fresh the fruit was. Since, there was an entire jackfruit cut into pieces, we made many preparations using it, which I would gradually share here but I’m starting off with a kebab. I have posted a Jackfruit biryani for my 100th post and have also posted a unique Jackfruit and raw banana cutlet earlier using this wonderful, fibrous fruit which yields a meaty texture on cooking, enabling it to be used as meat replacer in vegetarian preparations.

Panko Crusted Buttermilk & Mushroom Croquettes | Easy Appetiser Recipe

Foodelicious- Panko Crusted Mushroom Croquettes
Hello  all!!
Wish you a very happy 2015. I know I’m quite late in wishing you that. Though blogging makes me feel content inside, I know I have been absent for a very long time here. This was probably the longest break I took. Let me assure you the break was not intentional but sometimes there are other things which take a priority and blogging takes a back seat. I do not get time to sit and draft a post easily even if I cooked and clicked pictures.

DSC_0179-002

Hi all!!

For those who read my face book fan page regularly, would know that I share my son’s lunch box pictures quite regularly there to share more ideas on what can go into a lunch box. Recently, I had shared these quick to make, no bake bread Pizza which a lot of my friends and readers had liked and asked me to share the recipe.

So today on popular demand I’m sharing the recipe for the same. These bread pizzas are very healthy as I use a lot of veggies and also the bread I use is multigrain and not the white bread.

Mushroom & Onions Focaccia

Foodelicious-Onion & Mushroom Focaccia

Hi!

The Focaccia frequents my kitchen quite regularly as these are enriched breads which are easy to make. One can try making them with various toppings and variations. This one is the third focaccia recipe that I’m posting here. I’ve previously posted Rosemary-Onion Focaccia and Focaccia Caprese.

I was baking another batch of Focaccia Caprese when I decided to make this combination too. I wasn’t too sure how mushroom would taste on it but decided to give it a go and I was contented with the outcome. Focaccia is a very forgiving bread and one normally can’t mess it up. The combination worked and the addition of sea salt gave a nice coarse crunch and saltiness to the topping. I would recommend you not to skip the coarse sea salt. S’s verdict was that the focaccia tastes awesome because of the sea salt.

Schezwan Sauce Flavoured Mini Bread Cigars | Indo-Chinese Preparation

DSC_7029.1

Hi All!

There’s no major recipe in today’s post but it’s a concept in itself which can generate many more ideas and hence the preparation left me content. The preparation was created completely out of an attempt to finish off a few things lying in the fridge. There were a few slices of bread left from the loaf I had made after baking the Komaj and there was half a bottle of readymade Shezwan sauce giving me constant stare every time I opened the fridge.

Five Spice Flavoured Cottage Cheese Balls Stuffed With Plums and Chinese Plum Sauce | Step Wise | Food Presentation Ideas-2

DSC_0350

Hi all!!

I can’t believe at myself, I’m posting like I’m running a marathon. This is my fourth post in the last four days which  also happens to be my fourth consecutive post on plums and it is yet again a savoury preparation in which  I’ve used plums in two ways; stuffed and prepared a sauce. I’m trying hard to avoid the sugar but I might land up posting something sweet..temptations are bad!! As you must have guessed this post is again for Kitchen Aid Contest for IFBMeet, where I’m trying to win a Kitchen Aid Chopper.

Product Review Of Vegit Snack Mixes | Raw Mango & Mint Chutney |Summer Food | Gluten Free | Dairy Free

DSC_6623.1

Hi all!!
Past one month my kitchen mixer was giving me trouble and I was not able to grind anything because of that. It was lying in the service centre, as a particular part which had got spoilt was not available. If one reads my previous posts one would realise I’ve not posted any recipe which makes use of the mixer grinder. I realised how much of my daily chores are dependent on the humble grinder.

Grilled Chilli Paneer Cubes | Easy Starter Recipe | Bachelor’s Cooking | Gluten Free | Finger Food | Step Wise

DSC_6555.1

Hi All!

As I have mentioned in my Mango & Dark Chocolate Trifle Post, that the kid is 14yrs old now and what I didn’t mention was that he is in the 9th grade and due to which the study pressures are very high. His school hours have got extended by an hour now and post school he rushes for his coaching class, so he is invariably out for 11-1/2hrs and by the time he comes home, he is very tired and hungry. Though, I ensure that he carries two lunch boxes but at a growing age, the children are always hungry and they need to eat food at short intervals.

Green Tea Smoked Sprouted Finger Millet Cutlets | हरी चाय की महक वाले अंकुरित रागी कटलेट्स | Step Wise

DSC_6213
Hello!!
Last few days went like a gush of wind. With guests around and children having vacation, I never got any ‘Me’ time plus the days passed away cooking, cleaning, talking and site seeing. We also went to the beach and played in the sand, the kid who never wanted to come to the beach wasn’t ready to come back home. Playing with mother nature is always a heartening experience.
At the beach we tried a few street foods or rather beach food, first we had the white peas sundal, then we all tasted a mix platter of fritters, later we had freshly fire roasted spiced sweet corn which was the star preparation for that day. And yes, on our way back we stopped at our favourite chaat corner and had ‘paani poori’ and ‘Aloo chaat’ too. Wish we could have more of such days in our life, it refreshed me internally.

मिश्र दालों की स्टफ़्ड खाण्डवी | Reena’s Stuffed-Mixed Lentils Khandvi & PaperBoat Drinks At a Glance | Step Wise

Foodelicious - Mixed Lentils Khandvi

Hi all!!

Unfortunately for me, I’ve turned quite a loner after moving into this city, which happened ages back, but the huge language constraint,  and the cultural difference has definitely prevented me from finding like minded friends here!

Though now I do have a small group of friends from the locality with whom I got connected through FB, but then that’s all of my social life here.

A few months back, longing for some social connect, and also driven by the inner urge to connect with school friends, I created a group on the WhatsApp. Gradually, many more friends from my batch joined there, where we have been able to walk down the school’s memory lane together!

Red Beaten Rice & Potato Cutlets | Vegan | Gluten Free | Dairy Free

DSC_4498-001
Hi All!!
A lot of thought process goes into creating a recipe and then a lot of creativity is involved in clicking the pictures. If you notice in all food magazines, food channels, food blogs or any food related websites, a lot of attention is give to food styling and food presentation. As it’s said, that you eat first with your eyes and then with the mouth, so it’s important that the food  looks appealing and attracts you to try it. This is especially important when the food is presented in the virtual world where you can not really taste the food!!
One recipe rather one picture which was on the cover page of Good Food Magazine made me drool over it and I was so tempted to create a recipe similar to that and style it in a similar way,  And finally after many months of postponing I’ve created a similar recipe in my style and  made it more healthier. The original recipe was of a poha cutlet with a rasam dip. I’ve also made a poha cutlet only but instead of using the white version of poha (beaten rice) I opted for red, the more healthier one. Similarly, instead of the rasam dip, I made a tangy Mint chutney.

तन्दूरी भेंन कबाब (Lotus Stem Kebab) | Gluten Free | Vegan | Pregnancy Recipes | Step Wise |

DSC_4250-001

Hi All!!
Ever since I’ve announced the current event in my blog, I’m nostalgic about my pregnancy days, so many memories but what I remember the most is my stay at Mom’s place..As a custom I had gone to stay with my parents by the end of 7th month. And friends custom or no custom, I personally feel that there can be no other place more comforting than parents home. Living your entire life with them, the ease and comfort one experiences that can’t be replaced by any other person or place especially when one is going through so many internal changes, one needs emotional support. The love, the attention parents shower on their daughter and the baby is unimaginable.

Banana Rings | Monsoon Special | Shravan Special | Tea Time Snacks | Dairy Free | Step Wise Tutorial

DSC_4177-001
Hi All!!
It’s been about two years now that I’m off a full time job. At times I do feel that my monetary contribution to the family is very less as compared to my husband, who works really hard to run this family but when I see that I’m able to feed the family with a variety of food, take care of house hold chores, paying all the bills and many more things which are not even noticed, all those negative thoughts are thrown out of the mind. And the most important contribution which  I feel is, that I’m able to connect with the kid, give him time.
My younger kid who has just entered his teens is a lonely kid these days, with no company for him in the society we live… I’m his person. The minute he enters home after the school, he wants to be with me. He has to tell me what happened in the school, which friend did what, what subjects they studied, which movie they watched during break, who ate his lunch box and the comments his friends gave for the lunch box..

Sweet & Sour Potato | Indo-Chinese Starter | Vegetarian | Step Wise

DSC_4114-001
Hi All!!
Last few days were interesting in my life, I bought an interesting bunch of spice plants amongst which is an all spice plant too. All these plants are occupying a small space in my balcony. I met food blogger friends of my city, and chit chatted with them over lunch. It was indeed a humbling experience to be surrounded by such immensely talented people. I attended a friend’s surprise birthday party too who will be undergoing a heart surgery soon and I was overwhelmed to see the joy on her face. On top of such pleasant things happening around me, it’s also raining here and I’m loving the cloudy days, the dip in the temperature.
I forgot to mention a very important thing earlier that I’m reading  books too amongst all this, loads of books...actually cookbooks to be precise and my old recipe diaries that I’ve been filling for ages. My bed is full of books these days which I keep flipping through the day, and later at night stand as a heap of books next to my bed..so much for the late night cleaning!!!Winking smile

Sweet Potato Patty/Cutlet, For Fasting Days/ Ratalyache Cutlet..Navaratri Special

DSC_2574-001
Hi all!
It is just another week to go for the festive days of Navaratri to begin. Navaratri literally means ‘nine days’; it starts immediately after the full moon of Mahalaya i.e. the 17th October. The idea behind Navratri is the time for cleansing our own evil characteristics like hatred, jealousy, ignorance, anger, greed, violence, etc. inside and outside of us. In the West India, the divine feminine is referred to as Goddess, but in the East, she is referred to as Shakti, or Power and hence celebrated as Durga Puja. She is your own consciousness as well as the Supreme Consciousness. The Nine Nights/Moon Phases of the Goddess is an important time period wherein the energy of 3 primary Shaktis of the Divine Feminine, the Supreme Goddess, is invoked.

Soya Shami Kebab… For Vegetarians Who Want To Indulge In Non Veg Delicacies, Step Wise

DSC_2320-001
Hello!
Today I’m back with my favorite, the kebab. My regular readers would know my love for the kebabs. There was a time when I used to post kebab recipes very regularly and I did realize that I have not posted any, in the last few months. So like getting back to active blogging I tried to get back to making some kebabs too..
Since, the theme of ‘Only’ event for this month is Soya hosted by Preeti, I wanted to indulge in a soya kebab. Texturally, soya has  quite a close resemblance to meat and that comes to the advantage of the vegetarians who want to indulge into non-veg delicacies, in a vegetarian way. I’m amongst them and hence I do use soya to replace meat.

Cone and Cup Chaat and the II dose of FEEL GOOD HORMONE for my 201 post

P1040876

Hi!
What do people do to feel happy? Smile, laugh, play, amuse themselves, get a body massage done or exercise.  Every one has their ups and downs in life and people find different means to face it. I have told you my friends, that for me cooking good food is a big stress buster and when I cook something which is challenging,  trying it for the first time and I succeed in it gives me immense happiness.

Last few days I have been feeling very low for various reasons and I was really trying hard to smile and be pleasant to everyone but internally feeling shattered. In one of those days I went back to read  this post on Serotonins where I discussed the feel good hormone and was amazed to see the response. I can say it is one of my favourite posts as I felt that this post provided a platform for people to discuss. I thought of furthering this topic and discussion, which I am doing today and discussing another important topic “ENDORPHINS”.
