Hi!
I work through the week and also make three meals a day, so when weekend comes, my only requirement is to break the monotony and eat out. And probably like me, many families relax on weekends and eat out, so it becomes important that to balance it, we eat healthy and light food on the Monday, giving due rest to our stomach, which finally keeps our digestive system healthy and improves digestion.
I have been planning to start this series of ‘Light Meal On Mondays’ for quite some time now but somehow it was just getting postponed because of the currently more important commitments at home. I know I’m pushing my boundaries but I am going to really try hard and post a recipe to a light meal once in the week, preferably on a Monday hence forth.

Hi all!!

I can’t believe at myself, I’m posting like I’m running a marathon. This is my fourth post in the last four days which  also happens to be my fourth consecutive post on plums and it is yet again a savoury preparation in which  I’ve used plums in two ways; stuffed and prepared a sauce. I’m trying hard to avoid the sugar but I might land up posting something sweet..temptations are bad!! As you must have guessed this post is again for Kitchen Aid Contest for IFBMeet, where I’m trying to win a Kitchen Aid Chopper.

Sweet & Sour Potato | Indo-Chinese Starter | Vegetarian | Step Wise

Hi All!!
Last few days were interesting in my life, I bought an interesting bunch of spice plants amongst which is an all spice plant too. All these plants are occupying a small space in my balcony. I met food blogger friends of my city, and chit chatted with them over lunch. It was indeed a humbling experience to be surrounded by such immensely talented people. I attended a friend’s surprise birthday party too who will be undergoing a heart surgery soon and I was overwhelmed to see the joy on her face. On top of such pleasant things happening around me, it’s also raining here and I’m loving the cloudy days, the dip in the temperature.
I forgot to mention a very important thing earlier that I’m reading  books too amongst all this, loads of books...actually cookbooks to be precise and my old recipe diaries that I’ve been filling for ages. My bed is full of books these days which I keep flipping through the day, and later at night stand as a heap of books next to my bed..so much for the late night cleaning!!!Winking smile

Celebrating II Blog Anniversary With Darsaan and Ice Cream

Hi Friends!

As I had already mentioned during my May month’s event announcement and giveaways that this month is special as my blog baby turns 2 and today is the day when 2 years back with all hesitation and doubts in my mind I had posted my first post.

My blog is now 2 years and 253 posts old today. I had posted a Litchi Kulfi for the 1st Birthday which was appreciated by many. I wanted to post a simple and yet a very simple dessert for this occasion and I had planned the Darsaan many days back.

Crackling Spinach From Mainland China

As the name suggests that this preparation is from Mainland China. I was introduced to this recipe by S when he had taken us out for a dinner at Mainland China in Mumbai about five years ago. Out of all the preparations that we tried there, this became an instant favorite. And ever since then, I had always wanted to try this out.

It was hard to believe that the spinach could taste so nice. As the name suggests that this preparation makes a crackling sound on eating. It crackles as it is very crispy so one can also call this preparation as crispy spinach. 

The preparation is very simple and can be an excellent starter for parties as it will surely catch any one’s attention. It needs very few ingredients and can be made very quickly if one has already kept ready washed and dried spinach. 

This preparation is definitely not for calorie conscious people or for people on diet.

Ingredients

about 45-50 spinach leaves
1 tbsp chili flakes
1 tbsp roasted sesame seeds
1 tbsp cornstarch
1 tsp sesame oil
1 tsp sugar
oil for deep frying
salt to taste

Method


Food12-10

Wash the spinach and pat it dry. Take 5-6 leaves at a time and lay them one over the other.

Roll the layered leaves and chop them into fine strips. Repeat the procedure for all the remaining leaves.

Mix corn starch to the leaves and deep fry the spinach in 4-5 batches till crispy and remove it on a kitchen towel to remove the excess oil.

While frying first fry on a high flame and then reduce it to a medium-low to get the perfect crispy texture.

Heat the sesame oil and add chili flakes followed by crispy spinach, salt to taste, sugar and roasted sesame.  Toss the mix gently.

Serve immediately.
